Snake gourd curry (potla kaya- guthi kaya kura)


This recipe is from Maa Voori Vanta program on Maa TV.

Ingredients:

Snake gourd: 1
(Cut into long circles & pressure cook for 2 vigils)
Chana dal : 2 tbsp
(soak for 2 hrs)
Tamarind: a big lemon size
(extract pulp)
Chopped Onion: 1 cup
(saute in 1 tbsp of oil)
Oil: 6tbsp

Paste for stufing:
Roast the following ingredients in oil and grind to a coarse paste:

Urad dal: 4 tbsp
Cumin: 3 tbsp
Red chilies: 6-7
Coriander seeds: 6tbsp
Chana dal: 4 tbsp
Garlic: 5 pods
Curry leaves: a few
salt

Preparation:

In a mixing bowl, add fried onions, ground paste, tamarind paste -mix them well
Stuff this paste into cooked snake gourd circles
Heat 5 tbsp of oil in pan. Add stuffed snake gourd pieces.
Keep lid and cook for around 10 min.
Add soaked chana dal.
Cook till done.
Serve with rice/ roti.
